It was Dr Skafte that introduced me into the world of Scandinavian holistic nourishing foods, including Skyr. I was going through some rough patches of allergic reactions, without understanding the root of those inflations. After some searches, I ended up at Dr, Skaftes’ doorstep. She was a huge help, however the first weeks were a drastic change for me. I had to eat just a few ingredients, and yoghurt was also off the list. My Flemish sweet tooth let me crave all kinds of dairy. In other words, it didn’t take long before I was getting sidetracked.
The next appointment, I had a confession to make, I couldn’t resist my bowl of oats with milk or yoghurt. She asked me, did it had any negative effect on you? My answer, no, besides the fact this is my favourite dish of the day. There was a pause, and then she looked into my eyes and said, Mirabelle do you like Skyr? My voice started to shake a bit, ashamed after all those world trips I had no ABSOLUTE idea what she was talking about.
What is Swker?, I almost whispered. Well, Skyr is a traditional food from my home. It’s similar to Greek yoghurt, but with higher protein, which is perfect for your healthy, active lifestyle, and less sugar and fat, so you stay lean. As of today Skyr, is part of my healthy habits. I even spice it up with ginger jam. Today, I am sharing my breakfast oatmeal recipe with you.

You will need:
- 2 dl soya milk
- 3 sp Skyr
- 2 tbsp chia seeds
- 2 tbsp linsed seeds
- 2 tbsp ginger jam
How to make it:
- Mix all ingredients together, except for the jam, in a bowl
- In addition, top it up with your favourites
- For example, my go to is ginger jam
